The short answer
For weather + crowds + price together: late November (after Thanksgiving) or late January to early March are the sweet spots. UK school holidays make summer the default — it's hotter, wetter and busier, but entirely workable if you plan around the daily 3pm storm and take the midday break seriously.
Every month is a trade. February: gorgeous weather, low crowds, but shorter park hours and some ride maintenance. October: usually glorious, cheapest flights, but it's peak hurricane-watching season. July-August: everything open long hours, but 34° with a daily thunderstorm and the biggest crowds — the months most UK families actually have.
If you're locked to school summer holidays, don't let anyone talk you out of it — just plan like it's summer: parks at opening, pool at midday, parks again in the evening, and treat the 3pm storm as a scheduled event rather than bad luck.
